Hey all, I was just getting everything set for the big day and was wondering if anyone had some tip or tricks on deep frying a turkey. I am going to cook one in the oven, and one in the deep fryer, and eat the one that tastes better first :)
Also, if anyone has a good "injection" mixture, I would like to try something different. Thanx all

dont deep fry a frozen turkey LOL. You will like the tast of a deep fryed one a lot better they are real good. You will never use the oven again

Make sure you leave about 1.5 hours before you want it done in the fryer, 1/2 hour to heat the oil and about an hour to cook depending on the size. As for injections I usually just shoot in some butter.

deep fryed is the way to go but make sure its fully thawed before you drop in in the oil because if it isnt its like droping an ice cube in a fryer you get oil shooting all over... also fill the fry pot with water and drop the turkey in so you can see exactly how much oil you need in the pot ya dont want to over fill it...

Everyone says 3 minutes per pound for deep frying then add 5 minutes.
so a 20 lb bird would be 65 minutes fryin time.
They also say use Peanut oil.
One of these days I'm may try it.:D

Jeff,
Once you try a deep fried turkey, you won't go back. Your times are right, and so is the oil. I usually heat my oil to about 375-380, then drop the bird in, you will loose some temp. in the first couple of minutes. Try to keep the temp between 340-350, and go by the times you posted. Also, make sure that the bird is completely thawed, nothing like cutting one open, to find pink spots inside. Happy Thanksgiving to everyone.

We have deep fried so many turkeys i forget how many, hers what we do
Injector solution (amounts vary)
Wine (white)
Worcestershire
soy (not much)
Onion juice
garlic juice
cayenne pepper or tabasco (not much)
If you add the cayenne you may have to strain mix through cheese cloth.
Inject the turkey the night or day before.
Rub the outside at this time with cayenne pepper (dont be shy more is better(this will not make it blasting hot, just nicely seasoned on the outside)
The turkey will come out blackened cause of the cayenne.
Use peanut oil is you can afford it
We start at 360 deg once you place the turkey in crank up the burner as the temp will fall, we used to use the 3 min per lb but that never seemed to be quite enough if the temp falls below 300 deg so now we just use 4 min per lb.
Watch the temp as it can get away from you in a hurry, I saw one guy melt his pot from the heat, it started to warp, they quick took it off the burner and it combusted on its own, he ended up with a melted mess of a pot and a oil fire in his yard. Which brings up the other concern, do it in your yard, not on your deck,porch or near your house.
If possible do not carve the turkey and leave it on a platter for 10 min before eating, all that steam comming out will dry it out, we only carve as we need it this way its still juicy.

We sprinkle the outside with alot of seasonings. The skin sort of taste like a potato chip and the inside comes out nice and juicy .

We might try it between Thanksgiving and Christmas.... no sense using friends and family as guinea pigs...
Your friends and family will love it , as posted above , you'll never go back to oven cooked turkey :D

I am going to do the deep frying, and the little lady is going to do the oven one. I can't wait. I have been thawing both of them for alittle while now and I am starting to get alittle worried. I thought they would be thawed more than they are now, oh well, still have a couple days to go. Thanks everyone for the advice, its all great.
I am having the inlaws over for the weekend and I think more of the time is going to be spent in front of the tv on the couch! What big plans does everyone have for this holiday??

My turkey tip is to let someone else do it. I make my fiancee cook ours. Well actually he likes making it, I don't even have to make him. We haven't tried the turkey fryer yet, but he makes awesome oven turkey by using tons of butter and seasonings.
It sounds like these guys really know what they are talking about! Good luck!

The only way oven cooked beats deep fried is that you can't do stuffing in the deep fried one. For Thanksgiving you gotta have stuffing....

Digger, you can always make a stuffing seperate.
We never actually stuff the bird, we always cook the stuffing in a seperate pan, less chance of the stuffing and /or bird not cooking properly and someone getting sick.

My sister makes stuffing in a crock pot and it turns out pretty much the same as it does when cooked in the turkey.

I talked with my mom about the stuffing. Its all good cause we are having a turkey in the oven and the deep fryer. Thats the thing I like the most about the oven turkey....the stuffing. My mom keeps calling me back making sure I have the the directions. I am starting to second guess her!.. hehe
Its just a few hours away... I can't wait!!!!!!!

Man...after seeing that, I am going to have to go and get another one for tomorrow. I did the oil measure thing and I am glad I did, thats one heck of a mess you have there. ha. I think I will stop at the grocery store after I get some salting done and pick up another turkey. Damn thats good stuff....
